Instructions
- Preheat your oven to 350°F (175°C). Line a cupcake pan with paper liners.
- In a large bowl, mix together flour, sugar, baking soda, and salt.
- In another bowl, combine the vegetable oil, buttermilk, eggs, food coloring, vanilla extract, and vinegar.
- Pour the wet ingredients into the dry ingredients. Mix until just combined.
- Scoop the batter into the cupcake liners, filling each about two-thirds full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let them cool completely before frosting.
Notes
Use room temperature ingredients for better mixing. Avoid overmixing the batter.
