- 4 cups all-purpose flour
- 4 tablespoons sugar
- 4 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 4 large eggs
- 4 cups milk (any kind)
- 6 tablespoons melted butter or oil
- 2 teaspoons vanilla extract (optional)

Instructions
- In a large bowl, mix flour, sugar, baking powder, baking soda, and salt.
- In another bowl, beat the eggs. Stir in milk, melted butter, and vanilla.
- Pour wet mix into dry mix. Stir until just combined. Small lumps are fine.
- Heat a non-stick pan or griddle over medium heat. Add a little butter or oil.
- For each pancake, pour about 1/4 cup batter onto the pan. Cook 2–3 minutes.
- When bubbles form on top and edges look set, flip the pancake. Cook 1–2 more minutes.
- Move cooked pancakes to a warm plate. Repeat until all batter is used.
- Serve warm or let cool for storage.
Notes
Do not overmix the batter; keep the pan at medium heat for perfect pancakes.
