Ingredients

- 1 cup of your favorite protein (chicken, beef, or tofu)
- 2 cups of mixed vegetables (carrots, potatoes, peas)
- 4 cups of broth (chicken, beef, or vegetable)
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 teaspoon of salt
- 1 teaspoon of pepper
- 1 tablespoon of olive oil
- Optional: herbs like thyme or rosemary
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and garlic. Sauté until the onion is soft.
- Add your protein and cook until browned.
- Stir in the mixed vegetables.
- Pour in the broth and bring to a boil.
- Add salt, pepper, and any herbs you like.
- Reduce heat and let it simmer for about 20 minutes until everything is cooked through.
Notes
Serve hot with fresh herbs on top and pair with warm bread or rice. Store in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
