Crispy and tender zucchini fries cooked in the air fryer, coated with almond flour and parmesan for a light crunch.

- 2 medium zucchini
- 1 large egg
- 1/3 cup blanched almond flour
- 1/2 cup shredded parmesan cheese
- 1 tablespoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon dried parsley
- 1 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- Olive oil cooking spray
Instructions
- Cut the zucchini: Slice off the ends, slice each zucchini in half, cut each half lengthwise, and then into fries that are 3–4 inches long and about 1/2 inch thick.
- Prepare the coating mixture: In one bowl, whisk the egg with salt and pepper. In another bowl, combine almond flour, parmesan, garlic, paprika, parsley, salt, and pepper.
- Coat the zucchini fries: Dredge each zucchini piece in the egg, then in the almond flour mixture, pressing to adhere. Place coated fries on a plate.
- Cook the zucchini fries: Preheat the air fryer to 400°F, spray the basket with olive oil, place zucchini fries in a single layer, spray again, and cook for 4 minutes. Flip, spray, and cook for an additional 4 minutes. Repeat until all fries are cooked.
- Serve warm with your favorite dipping sauce.
Notes
Dry zucchini before coating for better adherence. Avoid crowding the air fryer basket for maximum crispiness.
