These crispy Air Fryer Zucchini Fritters are a quick and healthy snack made from grated zucchini, egg, flour, and cheese. Perfect for kids and adults alike!

- 2 medium zucchini, grated
- 1 large egg
- 1/4 cup grated parmesan cheese
- 1/3 cup all-purpose flour
- 1 small clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley (optional)
- Olive oil spray or a little oil to brush
Instructions
- Grate zucchini and place in a bowl. Sprinkle a pinch of salt and let sit for 5 minutes.
- Put shredded zucchini in a clean towel or fine sieve and squeeze out as much water as you can.
- In a mixing bowl, beat the egg. Add parmesan, flour, garlic, salt, pepper, and parsley. Mix well.
- Add the drained zucchini and stir until a batter forms. If too wet, add a little more flour.
- Preheat the air fryer to 375°F (190°C) for 3 minutes.
- Form small patties (about 2 tablespoons each). Lightly spray or brush both sides with oil.
- Place patties in the air fryer basket in a single layer. Do not crowd.
- Cook for 6-8 minutes, flip, then cook another 3-5 minutes until golden and crisp. Cook in batches as needed.
- Remove and drain on paper towels for a minute before serving.
Notes
Serve hot or warm with yogurt or a dip. Store in an airtight container in the fridge for up to 3 days.
