Description

This easy and warm Amish Cinnamon Bread features soft cake-like bread with sweet cinnamon swirls, perfect for breakfast or snacks.


Ingredients

  • ½ cup softened salted butter
  • ¾ cup granulated sugar
  • ¼ cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ⅓ cup sugar
  • 1 ½ teaspoons cinnamon
  • 2 tablespoons melted butter

Instructions

  1. Preheat the oven to 350ºF and grease a 9X5 loaf pan with butter or oil.
  2. In a large bowl, cream the softened butter with granulated sugar and brown sugar until light and fluffy.
  3. Add the egg, vanilla extract, and buttermilk and mix until fully incorporated.
  4. Sift the flour and baking soda into the bowl and mix until just combined, using a spatula to fold until no large lumps remain.
  5. Mix together ⅓ cup of sugar and 1 ½ teaspoons of cinnamon and set aside.
  6. Add half of the batter to the loaf pan, sprinkle half of the cinnamon-sugar mixture on top, and swirl it in.
  7. Add the remaining batter, smooth it out, then sprinkle the rest of the cinnamon-sugar mixture and swirl it in again.
  8. Drizzle 2 tablespoons of melted butter on top.
  9. Bake for 50-70 minutes until a toothpick comes out clean.
  10. Allow to cool in the pan for 20 minutes, then transfer to a wire rack to cool completely.

Notes

For extra flavor, use real vanilla extract. You can add chopped nuts or raisins for variation.
