A simple, tasty snack made from broccoli and cheese, baked until golden.

- 2 cups broccoli florets, finely chopped
- 1 cup breadcrumbs
- 1 1/2 cups shredded cheddar cheese
- 1/3 cup Parmesan cheese, grated
- 1 large egg
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
- Cooking spray or a drizzle of olive oil
Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper and cooking spray or olive oil.
- Steam or blanch the broccoli for 2-3 minutes until tender, then drain and finely chop.
- In a large bowl, combine the chopped broccoli, breadcrumbs, cheddar cheese, Parmesan cheese, egg, garlic powder, salt, and pepper. Mix until the mixture holds together.
- Scoop tablespoon-sized portions and roll into balls, placing them on the prepared baking sheet.
- Lightly spray or brush the balls with cooking spray or olive oil.
- Bake for 18-20 minutes, or until golden and crispy on the outside.
- Serve warm with your favorite dipping sauce.
Notes
Squeeze out extra water from the broccoli to avoid a wet mixture. Use fine breadcrumbs or panko for a crisp texture.
