A light and simple dessert that combines creamy baked yogurt with a crunchy pistachio crust, perfect for a mild and not too sweet treat.

- 2 cups plain yogurt
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 cup cornstarch
- 1/2 cup crushed pistachios
- 1/4 cup melted butter
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- Combine yogurt, powdered sugar, vanilla extract, and cornstarch in a mixing bowl. Mix well until smooth.
- Mix crushed pistachios, melted butter, and salt in another bowl to create the crust.
- Press the pistachio mixture into the bottom of a baking dish.
- Pour the yogurt mixture over the crust and spread evenly.
- Bake for 30-35 minutes until set and slightly golden on top.
- Allow to cool before serving.
Notes
Let it cool to room temperature to slice cleanly. Serve plain or with fresh berries, honey, or powdered sugar.
