Description

Delicious cookies featuring a perfect blend of sweet white chocolate and tart raspberries, ideal for baking enthusiasts.


Ingredients

  • 1 3/4 Cup All Purpose Flour
  • 1/2 Tsp Baking Soda
  • 1/4 Tsp Baking Powder
  • 8 Tbsp Unsalted Butter (Softened)
  • 1/4 Cup Brown Sugar (Packed)
  • 1/2 Cup Granulated White Sugar
  • 1 Tsp Vanilla Extract
  • 1 Egg
  • 1/2 Cup White Chocolate Chips
  • 1/2 Cup Raspberries (Roughly Chopped)

Instructions

  1. Preheat your oven to 350 degrees F. Prepare your baking sheets by spraying them with cooking spray or lining them with parchment paper. Set aside.
  2. In a large mixing bowl, combine the flour, baking soda, and baking powder. Stir to mix and set it aside.
  3. In a separate bowl, mix the softened butter and sugars together with a hand or stand mixer for 1-2 minutes until well combined.
  4. Add the egg and vanilla extract to the sugar mixture and beat for another minute until combined.
  5. Gently stir in the dry ingredients until just mixed. Do not overwork the dough. Fold in the roughly chopped raspberries and white chocolate chips.
  6. Scoop the dough into large balls, about 1 1/2 inches each. Place the cookie dough balls on your prepared baking sheet.
  7. Bake in the center of your oven for 10-15 minutes or until the cookies are golden.
  8. Once done, carefully remove the cookies from the baking tray and let them cool on a cooling rack.

Notes

For an extra touch, sprinkle a little sea salt on top of the cookies before baking. Store cookies in an airtight container at room temperature for up to a week.
