- 1 unbaked 9-inch pie crust
- 1 ½ cups cooked navy beans (rinsed & well-drained)
- 4 tablespoons unsalted butter, melted
- 3 large eggs
- 1 cup evaporated milk
- 1 cup granulated sugar
- ½ teaspoon cinnamon
- ½ teaspoon nutmeg
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
Instructions
- Preheat oven to 350°F (175°C).
- Blend the navy beans in a food processor until completely smooth. Add melted butter, eggs, evaporated milk, sugar, cinnamon, nutmeg, vanilla, and salt. Blend until creamy and well combined.
- Pour the mixture into the unbaked pie crust and smooth the top.
- Bake for 45–55 minutes until the center is set and the edges are lightly golden.
- Cool at least 1 hour before slicing for clean cuts. Serve warm or chilled.
Notes
Blend beans very smooth for the best texture. Use room-temperature eggs for even mixing. Let the pie cool fully for perfect slices. Sprinkle cinnamon sugar on top after baking for extra fragrance.
