Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup Biscoff spread
  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Cookie butter for topping
  • Caramel drizzle (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together butter, Biscoff spread, brown sugar, and granulated sugar until smooth.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture, mixing until just combined.
  5. Drop tablespoon-sized balls of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes or until the edges are golden.
  7. Allow to cool slightly, then spread cookie butter on top of each cookie.
  8. If desired, drizzle with caramel.
