A delightful appetizer combining sweet blackberries and creamy goat cheese on toasted baguette slices.

- 1 French baguette
- 6 oz goat cheese
- 1 cup fresh blackberries
- 2 tbsp honey or balsamic glaze
- 1 tbsp chopped fresh rosemary or thyme
- 2 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the baguette into 1/2-inch thick rounds.
- Arrange the slices on a baking sheet and brush each side lightly with olive oil.
- Toast the baguette slices in the oven for 8–10 minutes until golden and crisp.
- In a bowl, soften goat cheese at room temperature. Optionally, mix with a splash of milk for a whipped texture.
- Spread a generous layer of goat cheese onto each toasted baguette slice.
- Top each with 2–3 blackberries, lightly pressing some to release their juice.
- Drizzle with honey or balsamic glaze.
- Sprinkle with fresh rosemary or thyme. Serve immediately.
Notes
Serve warm or at room temperature. Best enjoyed fresh but can be stored in the fridge for up to a day if assembled carefully.
