Description

Quick and flavorful boneless buffalo chicken bites, perfect for game day snacks.


Ingredients

  • 1.5 pounds boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (panko for extra crunch)
  • 1/4 cup butter
  • 1/2 cup hot sauce (Frank’s RedHot or favorite brand)
  • Cooking spray or oil for baking/frying
  • Optional: chopped parsley, celery sticks, ranch or blue cheese dressing for serving

Instructions

  1. Preheat oven to 425°F (220°C) if baking. Line a baking sheet with foil and spray with cooking spray.
  2. Mix flour, salt, pepper, and garlic powder in a shallow bowl. Put beaten eggs in a second bowl. Put breadcrumbs in a third bowl.
  3. Toss chicken pieces in the flour mix, then dip in egg, then coat with breadcrumbs. Press crumbs to stick.
  4. Place coated chicken on the baking sheet. Lightly spray tops with cooking spray.
  5. Bake 15–20 minutes, turning once, until chicken is golden and internal temperature reaches 165°F (74°C). For air fryer, cook at 400°F (200°C) for 10–12 minutes, shaking halfway. For frying, heat oil to 350°F (175°C) and fry until golden, about 3–4 minutes. Drain on paper towels.
  6. In a small pan, melt butter and add hot sauce. Stir until smooth and warm. Remove from heat.
  7. Put cooked chicken in a large bowl. Pour sauce over chicken and toss to coat evenly.
  8. Serve immediately with celery sticks and ranch or blue cheese.

Notes

Cool leftover bites to room temp, then store in an airtight container for up to 3 days. Reheat in the oven to keep them crisp. For longer storage, freeze cooked, unsauced bites for up to 2 months.
