Quick and flavorful boneless buffalo chicken bites, perfect for game day snacks.

- 1.5 pounds boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 2 large eggs, beaten
- 1 cup breadcrumbs (panko for extra crunch)
- 1/4 cup butter
- 1/2 cup hot sauce (Frank’s RedHot or favorite brand)
- Cooking spray or oil for baking/frying
- Optional: chopped parsley, celery sticks, ranch or blue cheese dressing for serving
Instructions
- Preheat oven to 425°F (220°C) if baking. Line a baking sheet with foil and spray with cooking spray.
- Mix flour, salt, pepper, and garlic powder in a shallow bowl. Put beaten eggs in a second bowl. Put breadcrumbs in a third bowl.
- Toss chicken pieces in the flour mix, then dip in egg, then coat with breadcrumbs. Press crumbs to stick.
- Place coated chicken on the baking sheet. Lightly spray tops with cooking spray.
- Bake 15–20 minutes, turning once, until chicken is golden and internal temperature reaches 165°F (74°C). For air fryer, cook at 400°F (200°C) for 10–12 minutes, shaking halfway. For frying, heat oil to 350°F (175°C) and fry until golden, about 3–4 minutes. Drain on paper towels.
- In a small pan, melt butter and add hot sauce. Stir until smooth and warm. Remove from heat.
- Put cooked chicken in a large bowl. Pour sauce over chicken and toss to coat evenly.
- Serve immediately with celery sticks and ranch or blue cheese.
Notes
Cool leftover bites to room temp, then store in an airtight container for up to 3 days. Reheat in the oven to keep them crisp. For longer storage, freeze cooked, unsauced bites for up to 2 months.
