Description

A fun twist on the classic Boston cream pie, these cookie bites feature creamy vanilla custard and a rich chocolate drizzle in a delightful, bite-sized format.


Ingredients

  • 2 cups All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted Butter
  • 3/4 cup Granulated Sugar
  • 1 large Egg
  • 1 teaspoon Vanilla Extract
  • 1 cup Vanilla Custard
  • 1 cup Semi-Sweet Chocolate Chips
  • 2 tablespoons Vegetable Oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the all-purpose flour, baking powder, baking soda, and salt together.
  3. In a separate large bowl, cream the unsalted butter and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and mix well until combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Use a cookie scoop to drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Allow the cookies to cool completely on a wire rack.
  9. Once cooled, spread a spoonful of vanilla custard on half of the cookies.
  10. Top them with the remaining cookies to create a sandwich.
  11. In a small pan, melt the semi-sweet chocolate chips with vegetable oil over low heat until smooth.
  12. Drizzle the melted chocolate over the sandwich cookies.
  13. Chill in the refrigerator for at least 30 minutes to set the chocolate.

Notes

Chill the dough for better shape and consider different custard flavors for variety.
