- 2 cups All-Purpose Flour
- 1 teaspoon Baking Powder
- 1/2 teaspoon Baking Soda
- 1/4 teaspoon Salt
- 1/2 cup Unsalted Butter
- 3/4 cup Granulated Sugar
- 1 large Egg
- 1 teaspoon Vanilla Extract
- 1 cup Vanilla Custard
- 1 cup Semi-Sweet Chocolate Chips
- 2 tablespoons Vegetable Oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the all-purpose flour, baking powder, baking soda, and salt together.
- In a separate large bowl, cream the unsalted butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract to the butter mixture and mix well until combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Use a cookie scoop to drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool completely on a wire rack.
- Once cooled, spread a spoonful of vanilla custard on half of the cookies.
- Top them with the remaining cookies to create a sandwich.
- In a small pan, melt the semi-sweet chocolate chips with vegetable oil over low heat until smooth.
- Drizzle the melted chocolate over the sandwich cookies.
- Chill in the refrigerator for at least 30 minutes to set the chocolate.
Notes
Chill the dough for better shape and consider different custard flavors for variety.
