- 2 cups tapioca flour (cassava flour)
- 2 large eggs

Instructions
- Preheat your oven to 375°F (190°C).
- In a blender, combine the milk, vegetable oil, and salt. Blend on medium speed until well mixed.
- Gradually add the tapioca flour and blend until smooth.
- Add the eggs one at a time, blending well after each addition.
- Mix in the grated cheese until fully incorporated.
- Pour the batter into greased mini muffin tins, filling them about 3/4 full.
- Bake for 15-20 minutes, or until the tops are golden and puffed.
