Description

Soft, cheesy, and full of broccoli, these baked egg bites are perfect for meal prep and quick breakfasts.


Ingredients

  • 6 large eggs
  • 1 cup cottage cheese
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup fresh broccoli, chopped
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a silicone muffin tin with cooking spray.
  2. Whisk together the eggs and cottage cheese until well combined.
  3. Stir in the shredded cheddar cheese and chopped broccoli. Season with salt and pepper.
  4. Pour the mixture evenly into the greased muffin tin, filling each mold about 3/4 full.
  5. Bake for 20-25 minutes or until the egg bites are set and golden on top.
  6. Let cool slightly before removing from the tin. Serve warm or store in the refrigerator for meal prep.

Notes

Chop broccoli small so each bite has a bit in it. Store in an airtight container in the fridge for up to 4 days.
