Description

Deliciously warm and soft rolls bursting with garlic and melted mozzarella cheese, perfect for any occasion.


Ingredients

  • 1 garlic head
  • Sprinkle of salt
  • 30 grams olive oil
  • 50 grams butter (softened)
  • 1 tablespoon fresh parsley (chopped)
  • 90 grams warm milk
  • 7 grams active dry yeast
  • 25 grams honey
  • 200 grams all-purpose flour
  • 50 grams bread flour
  • 20 grams milk powder (optional)
  • 25 grams butter
  • 2 egg yolks
  • 1 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 200 grams mozzarella cheese
  • Garlic butter made from roasted garlic above
  • 1 egg (for egg wash)

Instructions

  1. Roast garlic: Take one whole garlic head, cut the top off, place it in a ramekin, and drizzle with olive oil. Sprinkle with salt, cover with aluminum foil, and roast at 160°C (320°F) for 2 hours until it’s buttery soft.
  2. Make garlic butter: Once the garlic is ready, mix it with softened butter, chopped parsley, and 2 tablespoons of the garlic oil you just made. Set this mixture aside.
  3. Prepare yeast mixture: In a bowl, combine the warm milk, active dry yeast, and honey. Let it sit for about 10 minutes until it becomes frothy.
  4. Make the dough: In a larger mixing bowl, combine the all-purpose flour, bread flour, sugar, milk powder (if using), softened butter, salt, and the yeast mixture.
  5. Knead the dough: Knead the dough using a dough hook attachment on medium speed for about 15-20 minutes, until it is soft and smooth.
  6. Proof the dough: Place the dough in a covered bowl and allow it to rise in a warm spot (around 29°C or 85°F) for about 1 hour and 30 minutes, until it doubles in size.
  7. Roll out the dough: Once risen, roll the dough out to about 1/4 cm (or 1/8 inch) thickness. Evenly spread the prepared garlic butter over the surface.
  8. Add mozzarella: Sprinkle the mozzarella cheese on top, then carefully roll the dough into a log.
  9. Cut the dough: Using a knife or dental floss, cut the rolled dough into 6 equal portions.
  10. Second proof: Place the rolls on a baking sheet, cover them, and let them proof for another 30 minutes until they appear puffy.
  11. Bake: Preheat your oven to 175°C (350°F). Brush the rolls with an egg wash and bake for 20-25 minutes, checking them after 20 minutes.
  12. Decorate: Once baked, brush the rolls with the remaining garlic butter and sprinkle with chopped parsley before serving.

Notes

Best served warm. Pair with extra garlic butter or marinara sauce for dipping.
