Description

A delightful and flavorful soda bread with sharp cheddar cheese and fresh herbs, perfect for any meal.


Ingredients

  • 4 cups all-purpose flour (plus extra as needed)
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 tbsp chopped fresh chives
  • 1 tbsp chopped fresh thyme
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp chopped fresh sage
  • 1 cup shredded cheddar cheese
  • 1 ¾ cups buttermilk

Instructions

  1. Preheat the oven to 425°F.
  2. In a mixing bowl, combine the flour, baking soda, and salt. Stir together well.
  3. Add the chopped fresh herbs and shredded cheese, mixing to combine.
  4. Pour in the buttermilk and stir until just combined.
  5. Turn the dough out onto a floured surface and knead lightly to form a smooth ball, avoiding over-kneading.
  6. Shape the dough into a ball and pat it into a 7-inch circle.
  7. Transfer the dough to a floured baking sheet and score a cross on top.
  8. Bake for 15 minutes, then reduce heat to 375°F and continue baking for another 30-35 minutes until it sounds hollow when tapped.
  9. Wrap the baked bread in a tea towel to cool, softening the crust.
