Ingredients

- 4 cups all-purpose flour (plus extra as needed)
- 1 ½ tsp baking soda
- 1 tsp salt
- 2 tbsp chopped fresh chives
- 1 tbsp chopped fresh thyme
- 1 tbsp chopped fresh rosemary
- 1 tbsp chopped fresh sage
- 1 cup shredded cheddar cheese
- 1 ¾ cups buttermilk
Instructions
- Preheat the oven to 425°F.
- In a mixing bowl, combine the flour, baking soda, and salt. Stir together well.
- Add the chopped fresh herbs and shredded cheese, mixing to combine.
- Pour in the buttermilk and stir until just combined.
- Turn the dough out onto a floured surface and knead lightly to form a smooth ball, avoiding over-kneading.
- Shape the dough into a ball and pat it into a 7-inch circle.
- Transfer the dough to a floured baking sheet and score a cross on top.
- Bake for 15 minutes, then reduce heat to 375°F and continue baking for another 30-35 minutes until it sounds hollow when tapped.
- Wrap the baked bread in a tea towel to cool, softening the crust.
