Ingredients

  • 1 cup tapioca flour
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 cup grated cheese (e.g., Minas cheese or mozzarella)
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a medium saucepan over medium heat, combine the milk, oil, and salt. Bring to a gentle boil.
  3. Remove from heat and stir in the tapioca flour until fully combined.
  4. Let the mixture cool slightly, then add the eggs one at a time, mixing well after each addition until smooth and slightly sticky.
  5. Fold in the grated cheese.
  6. Grease a mini muffin tin or line it with silicone molds.
  7. Scoop the dough into the molds, filling them about 3/4 full.
  8. Bake in the preheated oven for 15-20 minutes, or until the tops are golden and puffed.
  9. Remove from the oven and let cool slightly before serving.
