Ingredients

- 1 cup tapioca flour
- 1/2 cup milk
- 1/4 cup vegetable oil
- 2 large eggs
- 1 cup grated cheese (e.g., Minas cheese or mozzarella)
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 375°F (190°C).
- In a medium saucepan over medium heat, combine the milk, oil, and salt. Bring to a gentle boil.
- Remove from heat and stir in the tapioca flour until fully combined.
- Let the mixture cool slightly, then add the eggs one at a time, mixing well after each addition until smooth and slightly sticky.
- Fold in the grated cheese.
- Grease a mini muffin tin or line it with silicone molds.
- Scoop the dough into the molds, filling them about 3/4 full.
- Bake in the preheated oven for 15-20 minutes, or until the tops are golden and puffed.
- Remove from the oven and let cool slightly before serving.
Notes
