Quick and healthy chicken fritters made with zucchini, perfect for a low-carb, paleo-friendly meal.
Ingredients

- 2 medium zucchini, grated
- 1 cup cooked chicken, shredded
- 2 eggs
- 1/4 cup almond flour
- 1/4 cup green onions, chopped
- 1 tsp garlic powder
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Grate the zucchini and squeeze out excess moisture.
- Combine grated zucchini, shredded chicken, eggs, almond flour, green onions, garlic powder, salt, and pepper in a bowl.
- Heat olive oil in a skillet over medium heat.
- Scoop spoonfuls of the mixture into the skillet and flatten them slightly.
- Cook for about 3-4 minutes on each side until golden brown.
- Remove from skillet and drain on paper towels. Serve hot.
Notes
For a heartier meal, serve with a side of smothered chicken and rice. Store leftovers in an airtight container.
