Ingredients

- 1 lb chicken breasts or thighs
- 4 cups chicken broth
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried parsley
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh dill for garnish
Instructions
- In a large pot, combine the chicken, chicken broth, carrots, celery, onion, garlic, thyme, and parsley.
- Bring to a boil, then reduce heat and simmer for 25-30 minutes or until chicken is cooked through.
- Remove chicken, shred it, and return it to the pot.
- Stir in lemon juice, and season with salt and pepper.
- Garnish with fresh dill before serving.
Notes
Use bone-in chicken for more flavor. Feel free to add other vegetables, adjust seasoning, or add cream for richness.
