Description

A warm and comforting chicken soup, perfect for busy weeknights or cozy weekends.


Ingredients

Scale
  • 1 lb chicken breasts or thighs
  • 4 cups chicken broth
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh dill for garnish

Instructions

  1. In a large pot, combine the chicken, chicken broth, carrots, celery, onion, garlic, thyme, and parsley.
  2. Bring to a boil, then reduce heat and simmer for 25-30 minutes or until chicken is cooked through.
  3. Remove chicken, shred it, and return it to the pot.
  4. Stir in lemon juice, and season with salt and pepper.
  5. Garnish with fresh dill before serving.

Notes

Use bone-in chicken for more flavor. Feel free to add other vegetables, adjust seasoning, or add cream for richness.
