- 8 oz dark chocolate, chopped
- 1/2 cup heavy cream
- 1/2 cup fresh raspberries
- 1 tablespoon unsalted butter
- Powdered sugar (for dusting)
- Cocoa powder (for coating)
- Pink-colored candy melts (optional, for decorating)
Instructions
- In a saucepan, heat the heavy cream over medium heat until just simmering.
- Remove from heat and stir in the chopped dark chocolate and butter until smooth.
- Gently fold in the fresh raspberries until just combined.
- Refrigerate the mixture for about 120 minutes, or until firm enough to scoop.
- Once firm, use a melon baller or small spoon to scoop out small amounts of the mixture and roll them into balls.
- Roll each truffle in cocoa powder or powdered sugar to coat.
- If desired, melt pink candy melts and drizzle them over the truffles for decoration.
- Serve immediately or package them up as gifts.
Notes
Using good quality dark chocolate will make a big difference in flavor. Be gentle when folding in the raspberries to keep them intact.
