Description

Delicious dark chocolate truffles infused with fresh raspberries, perfect for special occasions or a sweet treat at home.


Ingredients

  • 8 oz dark chocolate, chopped
  • 1/2 cup heavy cream
  • 1/2 cup fresh raspberries
  • 1 tablespoon unsalted butter
  • Powdered sugar (for dusting)
  • Cocoa powder (for coating)
  • Pink-colored candy melts (optional, for decorating)

Instructions

  1. In a saucepan, heat the heavy cream over medium heat until just simmering.
  2. Remove from heat and stir in the chopped dark chocolate and butter until smooth.
  3. Gently fold in the fresh raspberries until just combined.
  4. Refrigerate the mixture for about 120 minutes, or until firm enough to scoop.
  5. Once firm, use a melon baller or small spoon to scoop out small amounts of the mixture and roll them into balls.
  6. Roll each truffle in cocoa powder or powdered sugar to coat.
  7. If desired, melt pink candy melts and drizzle them over the truffles for decoration.
  8. Serve immediately or package them up as gifts.

Notes

Using good quality dark chocolate will make a big difference in flavor. Be gentle when folding in the raspberries to keep them intact.
