- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 ¾ cups all-purpose flour
- 1 tsp baking powder
- 1 tsp cinnamon
- ½ tsp salt
- 8 oz cream cheese, softened
- ¼ cup powdered sugar
- 1 tbsp milk
- ½ cup cinnamon-sugar mixture (for rolling)
- 1 cup icing glaze (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter and granulated sugar in a large mixing bowl until light and fluffy, about 3-5 minutes.
- Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt; gradually add to the wet mixture until a dough forms.
- In another bowl, mix the softened cream cheese, powdered sugar, and milk until smooth and creamy for the filling.
- Flatten about 2 tablespoons of cookie dough into a disk, place 1 teaspoon of cream cheese filling in the center, fold and seal the dough, then roll into a ball.
- Roll each ball in the cinnamon-sugar mixture until fully coated.
- Place the dough balls on the baking sheet, spacing them apart.
- Bake for 12-15 minutes until edges are lightly golden; the center should be soft and chewy.
- Let cool slightly before optionally drizzling with icing glaze.
Notes
Cookies are best served warm but can be enjoyed at room temperature. For storage, place in an airtight container at room temperature for up to a week or freeze for longer storage.
