Ingredients

- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 tablespoon ground cinnamon
- 1/4 cup brown sugar
- 1/4 cup granulated sugar (for coating)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix together the flour, baking soda, and salt.
- In a separate bowl, cream the butter and sugar until light and fluffy.
- Beat in the egg and vanilla until well combined.
- Gradually add the dry ingredients to the wet ingredients and mix until everything is combined.
- In a small bowl, combine the brown sugar and cinnamon for the filling.
- Roll the dough out into a rectangle, sprinkle the cinnamon-sugar mixture on top, and roll it up tightly.
- Cut into slices and roll each slice in cinnamon-sugar.
- Place on a baking sheet and bake for 10-12 minutes or until golden brown.
- Allow to cool slightly before serving.
Notes
Store in an airtight container at room temperature for up to a week. Freeze for up to three months with parchment paper in between layers.
