Description

Delightful cookies combining the flavors of classic cinnamon rolls with the convenience of cookies, perfect for any time of the day.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the flour, baking soda, and salt.
  3. In a separate bowl, cream the butter and sugar until light and fluffy.
  4. Beat in the egg and vanilla until well combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until everything is combined.
  6. In a small bowl, combine the brown sugar and cinnamon for the filling.
  7. Roll the dough out into a rectangle, sprinkle the cinnamon-sugar mixture on top, and roll it up tightly.
  8. Cut into slices and roll each slice in cinnamon-sugar.
  9. Place on a baking sheet and bake for 10-12 minutes or until golden brown.
  10. Allow to cool slightly before serving.

Notes

Store in an airtight container at room temperature for up to a week. Freeze for up to three months with parchment paper in between layers.
