- 1/4 cup Brown Sugar (Light or dark brown sugar can be used.)
- 1 tablespoon Ground Cinnamon (Mix with nutmeg for extra warmth.)
- 4 ounces Cream Cheese (Mascarpone can be a delightful alternative.)
- 1 cup Powdered Sugar (Adjust for preferred sweetness.)
- 1 teaspoon Vanilla Extract (Using pure vanilla enhances flavor.)
- 2 tablespoons Melted Butter
Instructions
- In a bowl, mix flour, baking powder, and salt.
- In another bowl, whisk milk, egg, 2 tbsp oil, and 2 tbsp melted butter.
- Pour wet mix into dry mix and stir until just combined. Do not overmix.
- In a small bowl, mix brown sugar and cinnamon for the swirl.
- Heat a nonstick pan over medium-low heat and grease lightly.
- Pour about 1/4 cup batter for each pancake onto the pan.
- Drop a small spoon of the cinnamon sugar mix on the pancake center.
- Swirl the cinnamon mix gently into the batter with the back of the spoon.
- Cook until bubbles form and edges set, then flip and cook the other side.
- Make the glaze: beat cream cheese, powdered sugar, vanilla, and 2 tbsp melted butter until smooth.
- Drizzle or spread the cream cheese glaze on warm pancakes.
Notes
Serve warm with extra glaze or maple syrup. Add fresh fruit for a cozy meal.
