Description

Soft pancakes with a sweet cinnamon swirl and cream cheese glaze, perfect for brunch.


Ingredients

  • 2 tablespoons Vegetable Oil (Melted butter can be used for flavor.)
  • 2 tablespoons Melted Butter (Vegetable oil can be a substitute.)
  • 1/4 cup Brown Sugar (Light or dark brown sugar can be used.)
  • 1 tablespoon Ground Cinnamon (Mix with nutmeg for extra warmth.)
  • 4 ounces Cream Cheese (Mascarpone can be a delightful alternative.)
  • 1 cup Powdered Sugar (Adjust for preferred sweetness.)
  • 1 teaspoon Vanilla Extract (Using pure vanilla enhances flavor.)
  • 2 tablespoons Melted Butter

Instructions

  1. In a bowl, mix flour, baking powder, and salt.
  2. In another bowl, whisk milk, egg, 2 tbsp oil, and 2 tbsp melted butter.
  3. Pour wet mix into dry mix and stir until just combined. Do not overmix.
  4. In a small bowl, mix brown sugar and cinnamon for the swirl.
  5. Heat a nonstick pan over medium-low heat and grease lightly.
  6. Pour about 1/4 cup batter for each pancake onto the pan.
  7. Drop a small spoon of the cinnamon sugar mix on the pancake center.
  8. Swirl the cinnamon mix gently into the batter with the back of the spoon.
  9. Cook until bubbles form and edges set, then flip and cook the other side.
  10. Make the glaze: beat cream cheese, powdered sugar, vanilla, and 2 tbsp melted butter until smooth.
  11. Drizzle or spread the cream cheese glaze on warm pancakes.

Notes

Serve warm with extra glaze or maple syrup. Add fresh fruit for a cozy meal.
