These Fluffy Cinnamon Sugar Donut Muffins are soft, sweet, and easy to bake, perfect for a snack or party.
Ingredients

- 1.5 cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- 0.5 tsp salt
- 0.5 tsp ground cinnamon
- 0.5 cups milk
- 0.5 cups vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 0.25 cups granulated sugar (for coating)
- 1 tsp ground cinnamon (for coating)
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix flour, 1 cup sugar, baking powder, salt, and 0.5 tsp cinnamon.
- In another bowl, beat eggs. Add milk, oil, and vanilla. Stir well.
- Pour wet mix into dry mix. Stir until just combined. Do not overmix.
- Line a muffin pan or spray with nonstick spray. Fill each cup about 3/4 full.
- Bake for 12–15 minutes, until a toothpick in the center comes out clean.
- Let muffins cool in the pan for 5 minutes. Then transfer to a wire rack.
- Mix 0.25 cups sugar and 1 tsp cinnamon in a shallow bowl.
- While muffins are still a little warm, brush or rub them with a little oil or melted butter.
- Roll each muffin in the cinnamon-sugar mix until coated.
Notes
Store in an airtight container for 1–2 days at room temperature, up to 5 days in the refrigerator, or wrap individually and freeze up to 2 months.
