Description

These Fluffy Cinnamon Sugar Donut Muffins are soft, sweet, and easy to bake, perfect for a snack or party.


Ingredients

Scale
  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 0.5 tsp ground cinnamon
  • 0.5 cups milk
  • 0.5 cups vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 0.25 cups granulated sugar (for coating)
  • 1 tsp ground cinnamon (for coating)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix flour, 1 cup sugar, baking powder, salt, and 0.5 tsp cinnamon.
  3. In another bowl, beat eggs. Add milk, oil, and vanilla. Stir well.
  4. Pour wet mix into dry mix. Stir until just combined. Do not overmix.
  5. Line a muffin pan or spray with nonstick spray. Fill each cup about 3/4 full.
  6. Bake for 12–15 minutes, until a toothpick in the center comes out clean.
  7. Let muffins cool in the pan for 5 minutes. Then transfer to a wire rack.
  8. Mix 0.25 cups sugar and 1 tsp cinnamon in a shallow bowl.
  9. While muffins are still a little warm, brush or rub them with a little oil or melted butter.
  10. Roll each muffin in the cinnamon-sugar mix until coated.

Notes

Store in an airtight container for 1–2 days at room temperature, up to 5 days in the refrigerator, or wrap individually and freeze up to 2 months.
