Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 2 cups kale, chopped
  • 1 cup spinach leaves
  • 1 cup zucchini, chopped
  • 1 cup broccoli florets
  • 1 cup green peas
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Heat olive oil over medium heat in a large pot.
  2. Add chopped onion and garlic; sauté until onions are translucent.
  3. Pour in the vegetable broth and bring to a boil.
  4. Add kale, spinach, zucchini, broccoli, and green peas.
  5. Reduce heat and let simmer for 15-20 minutes until vegetables are tender.
  6. Season with salt, pepper, and lemon juice.
  7. Blend if desired for a smoother texture, and serve warm.
