- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons red curry paste
- 1 can (14 oz) coconut milk
- 4 cups vegetable broth
- 2 cups mixed vegetables (carrots, bell peppers, broccoli)
- 1 teaspoon soy sauce
- Salt and pepper to taste
- Dumplings (store-bought or homemade)
- Fresh cilantro for garnish
Instructions
- Heat the oil in a large pot over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and grated ginger, and cook for another minute.
- Stir in the red curry paste and cook for a minute to release its flavors.
- Pour in the coconut milk and vegetable broth, and bring to a simmer.
- Add the mixed vegetables and soy sauce, and cook until the vegetables are tender.
- Meanwhile, prepare the dumplings according to package instructions.
- Once the soup is ready, season with salt and pepper to taste.
- Serve the soup hot, topped with cooked dumplings and garnished with fresh cilantro.
