Description

Delightfully crunchy on the outside and soft inside, these Coffee Butter Cookies combine rich coffee flavor with creamy butter, perfect for coffee lovers.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 2 tablespoons brewed coffee (cooled)
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs, brewed coffee, and vanilla extract. Mix well until combined.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture. Mix until just combined.
  6. Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, leaving some space between each cookie.
  7. Bake for 12-15 minutes or until the edges are lightly golden.
  8. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
