Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced

  • 1 cup heavy cream or coconut milk
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, sautéing until softened.
  2. Stir in garlic and cook for 1 minute more.
  3. Pour in vegetable broth and bring to a boil.
  4. Add potatoes and mixed vegetables, reduce heat, and simmer until veggies are tender.
  5. Stir in heavy cream or coconut milk, and season with salt and pepper.
  6. Simmer for an additional 5 minutes, then remove from heat.
  7. Serve hot, garnished with fresh herbs and accompanied by bread.

Notes

Feel free to use any vegetables you have on hand. For a thicker soup, blend a portion and stir it back in. Adjust seasoning to taste.
