- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups potatoes, diced
- 2 cups mixed vegetables (e.g., peas, corn, green beans)
- 1 cup heavy cream or coconut milk
- Salt and pepper to taste
- Fresh herbs (e.g., parsley or thyme) for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, sautéing until softened.
- Stir in garlic and cook for 1 minute more.
- Pour in vegetable broth and bring to a boil.
- Add potatoes and mixed vegetables, reduce heat, and simmer until veggies are tender.
- Stir in heavy cream or coconut milk, and season with salt and pepper.
- Simmer for an additional 5 minutes, then remove from heat.
- Serve hot, garnished with fresh herbs and accompanied by bread.
Notes
Feel free to use any vegetables you have on hand. For a thicker soup, blend a portion and stir it back in. Adjust seasoning to taste.
