Description

A warm and soothing soup featuring potstickers in a rich, creamy broth, perfect for chilly evenings.


Ingredients

  • 12 pieces Potstickers (homemade or frozen)
  • 4 cups Chicken or Vegetable Broth
  • 1 tablespoon Fresh Ginger (minced)
  • 3 cloves Garlic (minced)
  • 1 can Coconut Milk
  • 2 tablespoons Soy Sauce
  • 2 tablespoons Fresh Lime Juice
  • 1/4 cup Cilantro (chopped)
  • 1/4 cup Green Onions (sliced)

Instructions

  1. In a large pot, heat a bit of oil over medium heat. Add the minced ginger and garlic, and sauté for about 1-2 minutes until fragrant.
  2. Pour in the chicken or vegetable broth and bring it to a boil.
  3. Add the potstickers to the pot. Cook for about 5-7 minutes, or until they are heated through.
  4. Stir in the coconut milk, soy sauce, and fresh lime juice. Let it simmer for another 3-5 minutes.
  5. Remove the pot from the heat and stir in the chopped cilantro and sliced green onions.

Notes

Serve hot and garnish with extra cilantro or green onions. Pairs well with crusty bread.
