Ingredients

- 4 large eggs
- 1 cup cottage cheese
- 1/2 cup diced bell peppers
- 1/2 cup chopped spinach
- 1/4 cup chopped green onions
- Salt and pepper to taste
- Olive oil or cooking spray for greasing
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin with olive oil or cooking spray.
- In a mixing bowl, whisk together the eggs and cottage cheese until well combined.
- Stir in the diced bell peppers, chopped spinach, and green onions.
- Season with salt and pepper to taste.
- Pour the egg mixture evenly into the prepared muffin tin, filling about 3/4 full.
- Bake for 20-25 minutes, or until the egg bites are set and lightly golden on top.
- Allow to cool slightly before removing from the tin. Enjoy warm or store in the fridge for meal prep.
