Description

Soft, light, and easy-to-make egg bites with cottage cheese, perfect for busy mornings and meal prep.


Ingredients

  • 4 large eggs
  • 1 cup cottage cheese
  • 1/2 cup diced bell peppers
  • 1/2 cup chopped spinach
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Olive oil or cooking spray for greasing

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin with olive oil or cooking spray.
  2. In a mixing bowl, whisk together the eggs and cottage cheese until well combined.
  3. Stir in the diced bell peppers, chopped spinach, and green onions.
  4. Season with salt and pepper to taste.
  5. Pour the egg mixture evenly into the prepared muffin tin, filling about 3/4 full.
  6. Bake for 20-25 minutes, or until the egg bites are set and lightly golden on top.
  7. Allow to cool slightly before removing from the tin. Enjoy warm or store in the fridge for meal prep.
