Instructions
- In a large pot, cook the sausage over medium heat until browned. Remove and set aside.
- In the same pot, add onions and garlic; sauté until translucent.
- Add diced potatoes and broth; bring to a boil.
- Reduce heat and simmer until potatoes are tender, about 15 minutes.
- Stir in the cooked sausage, cream, and cheese; season with salt and pepper.
- Cook until cheese is melted and soup is heated through.
- Serve warm with crusty bread or side salad.
Notes
Use a variety of potatoes for added texture and flavor. For a lighter version, substitute half-and-half for the heavy cream.
