- 2 cups broccoli florets
- 2 cups fresh spinach
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream or coconut milk
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic, sauté until softened.
- Pour in the vegetable broth and add broccoli florets.
- Bring to a boil, then reduce heat and simmer until broccoli is tender.
- Stir in fresh spinach and cook until wilted.
- Blend the soup until smooth, then return to heat.
- Stir in heavy cream or coconut milk, seasoning with salt and pepper.
- Serve warm.
Notes
For a thinner soup, add more broth when blending. Blend carefully to avoid splattering, and adjust seasonings as needed.
