Ingredients

  • 1 cup cooked chicken, shredded
  • 1 cup rice
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion, carrots, celery, and garlic. Cook until the vegetables are tender.
  2. Stir in chicken broth and bring it to a boil.
  3. Add rice and cook according to package directions until tender.
  4. Reduce heat and stir in the cooked chicken and heavy cream.

Notes
