- 1 cup cooked chicken, shredded
- 1 cup rice
- 4 cups chicken broth
- 1 cup heavy cream
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion, carrots, celery, and garlic. Cook until the vegetables are tender.
- Stir in chicken broth and bring it to a boil.
- Add rice and cook according to package directions until tender.
- Reduce heat and stir in the cooked chicken and heavy cream.
- Season with salt and pepper to taste.
- Simmer for an additional 5-10 minutes until heated through.
- Garnish with fresh parsley and serve.
Notes
For a thicker soup, add more rice or use less broth. You can substitute low-fat milk for a lighter version.
