Description

A delicious and easy dish that combines honey-glazed chicken, colorful vegetables, and a creamy chipotle sauce, perfect for weeknight dinners.


Ingredients

  • 8 oz penne pasta
  • 2 cups honey-glazed chicken, diced
  • 1 cup asparagus, chopped
  • 1 cup bell peppers, sliced
  • 1 cup peas
  • 2 chipotle peppers in adobo sauce, minced
  • 1/2 cup Parmesan cheese, grated
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • Salt to taste
  • Pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Cook penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add honey-glazed chicken and cook until golden brown and cooked through. Remove from skillet and set aside.
  3. In the same skillet, add garlic and sauté until fragrant.
  4. Add asparagus, bell peppers, and peas, and cook until tender.
  5. Stir in chipotle peppers and heavy cream, bringing to a simmer.
  6. Add Parmesan cheese, stirring until the sauce thickens.
  7. Return the chicken and pasta to the skillet and toss everything together.
  8. Season with salt and pepper to taste, and serve immediately.

Notes

Serve garnished with extra Parmesan cheese and fresh herbs. Pair with a simple side salad or crusty bread.
