- 8 oz penne pasta
- 2 cups honey-glazed chicken, diced
- 1 cup asparagus, chopped
- 1 cup bell peppers, sliced
- 1 cup peas
- 2 chipotle peppers in adobo sauce, minced
- 1/2 cup Parmesan cheese, grated
- 1 cup heavy cream
- 3 cloves garlic, minced
- Salt to taste
- Pepper to taste
- 2 tbsp olive oil
Instructions
- Cook penne pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add honey-glazed chicken and cook until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, add garlic and sauté until fragrant.
- Add asparagus, bell peppers, and peas, and cook until tender.
- Stir in chipotle peppers and heavy cream, bringing to a simmer.
- Add Parmesan cheese, stirring until the sauce thickens.
- Return the chicken and pasta to the skillet and toss everything together.
- Season with salt and pepper to taste, and serve immediately.
Notes
Serve garnished with extra Parmesan cheese and fresh herbs. Pair with a simple side salad or crusty bread.
