Description

A comforting bowl of noodles in a rich garlic cream broth with chicken and greens. Quick and easy for busy weeknights.


Ingredients

  • 2 chicken breasts, sliced
  • 4 cups chicken broth
  • 2 cups ramen noodles
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 cup broccoli florets
  • 1 cup baby spinach
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add sliced chicken and cook until browned and cooked through, about 5-7 minutes.
  2. Add minced garlic and sauté for another minute until fragrant.
  3. Pour in the chicken broth and bring to a boil.
  4. Add ramen noodles and cook according to package instructions, usually around 3-4 minutes.
  5. Stir in the heavy cream, soy sauce, broccoli, and spinach, cooking until the vegetables are tender, about 2-3 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with chopped green onions.

Notes

For extra flavor, drizzle with soy sauce or chili oil. Can store in the fridge for up to 3 days.
