Enjoy the crunch and comfort of fries while keeping carbs very low with these Keto French Fries made from almond or coconut flour.
Ingredients

- 1 Cup (100g) almond flour or Just less than 1/2 Cup (50g) coconut flour
- 3 Teaspoons (8g) xanthan gum
- 6 Tbsp (60g) hot water (for almond flour) or 7–8 Tbsp (75-90g) hot water (for coconut flour)
- Oil for frying or brushing
- Salt to taste
Instructions
- In a mixing bowl, combine almond flour (or coconut flour) and xanthan gum.
- Add hot water and knead the dough until it becomes sticky and all ingredients are well combined.
- Let the dough rest for 15 minutes.
- Roll the dough thin between two sheets of parchment paper to about 1/4 cm thick.
- Cut the rolled dough into 25-30 slim fry shapes.
- For frying: Heat a generous amount of oil in a medium pan over medium-low heat. Fry the strips until golden brown on all sides.
- Transfer fried fries to a plate lined with paper towels and sprinkle with salt.
- For baking: Preheat the oven to 400°F (200°C). Place dough strips on a greased baking tray, brush with oil, and bake until golden brown, tossing every 5 minutes for even cooking (10-15 minutes).

Notes
Serve hot with keto-friendly dips like garlic mayo, sugar-free ketchup, or herb aioli. Store in an airtight container in the fridge for up to 2-3 days. Reheat in an oven or air fryer for the best crisp.
