Description

Delicious mini potato skins filled with cheese, sour cream, and chives, perfect for parties or snacks.


Ingredients

Scale
  • 12 Small potatoes
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 cup Cheddar cheese, shredded
  • 1/2 cup Sour cream
  • 2 tablespoons Chives, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub and pierce the small potatoes.
  3. Rub with olive oil, salt, and pepper.
  4. Bake in the oven for about 30 minutes, until tender.
  5. Let cool slightly, then slice in half and scoop out some of the flesh.
  6. Return potato halves to the oven for another 10 minutes to crisp up.
  7. Remove and fill with cheese, then return to the oven until cheese is melted.
  8. Top with sour cream and chives before serving.

Notes

Serve warm and let guests pick them up with their hands. Pair with extra sour cream if desired.
