Description

A simple, light, and crustless quiche featuring fresh spinach, onion, and feta cheese that’s quick to make.


Ingredients

  • 2 cups fresh spinach, chopped
  • 1 onion, diced
  • 1 cup feta cheese, crumbled
  • 4 eggs
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a pan over medium heat.
  3. Add diced onion and sauté until translucent.
  4. Add chopped spinach and cook until wilted.
  5. In a bowl, whisk together eggs, milk, salt, and pepper.
  6. Add the sautéed onion and spinach to the egg mixture.
  7. Stir in crumbled feta cheese.
  8. Pour the mixture into a greased pie dish.
  9. Bake for 30-35 minutes, or until the quiche is set and lightly golden.
  10. Let it cool for a few minutes before slicing and serving.

Notes

Squeeze cooked spinach in a towel to remove extra water for better setting. Can use different cheeses or add cooked bacon for variety.
