- 125g unsalted butter, softened
- 100g icing sugar
- 1 large egg
- 250g plain flour
- 1 tsp vanilla extract
- 1 tsp baking powder
- 100g custard powder (for filling)
- 300ml milk (for filling)
- 50g icing sugar (for filling)
Instructions
- Preheat the oven to 180°C (350°F).
- Cream the softened butter and icing sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- Sift in the flour and baking powder, then mix until a dough forms.
- Roll out the dough on a floured surface and cut into desired shapes.
- Place the shapes on a baking tray lined with parchment paper and bake for 10-12 minutes until lightly golden.
- For the custard filling, mix the custard powder with a little milk to form a paste.
- Heat the remaining milk in a saucepan, stir in the custard paste and cook until thickened.
- Add icing sugar to the custard mixture and let it cool.
- Once the cookies are cooled, spread custard filling between two cookies to make a sandwich.
