Description

Ingredients

Scale
  • 125g unsalted butter, softened
  • 100g icing sugar
  • 1 large egg
  • 250g plain flour
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 100g custard powder (for filling)
  • 300ml milk (for filling)
  • 50g icing sugar (for filling)

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Cream the softened butter and icing sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. Sift in the flour and baking powder, then mix until a dough forms.
  5. Roll out the dough on a floured surface and cut into desired shapes.
  6. Place the shapes on a baking tray lined with parchment paper and bake for 10-12 minutes until lightly golden.
  7. For the custard filling, mix the custard powder with a little milk to form a paste.
  8. Heat the remaining milk in a saucepan, stir in the custard paste and cook until thickened.
  9. Add icing sugar to the custard mixture and let it cool.
  10. Once the cookies are cooled, spread custard filling between two cookies to make a sandwich.
