- 2 boneless, skinless chicken breasts
- 4 cups chicken broth
- 2 carrots, chopped
- 2 stalks celery, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup green beans, trimmed and chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, combine the chicken broth, carrots, celery, onion, and garlic. Bring to a simmer over medium heat.
- Add the chicken breasts to the pot and cook until they are no longer pink in the middle, about 15-20 minutes.
- Remove the chicken from the pot, shred it using two forks, and return it to the pot.
- Stir in the green beans, thyme, rosemary, salt, and pepper. Cook for an additional 5-10 minutes, until the vegetables are tender.
- Serve hot, garnished with fresh parsley.
Notes
For extra flavor, sauté onions and garlic in olive oil before adding the broth and vegetables. You can also add other vegetables like peas or corn.
