A quick, low-carb dinner with zucchini and chicken, perfect for meal prep and keto diets.


Ingredients

  • 2 large zucchinis
  • 2 cups cooked chicken, shredded
  • 1 cup marinara sauce (sugar-free for keto)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the insides to create boats.
  3. Mix the shredded chicken, marinara sauce, garlic powder, Italian seasoning, salt, and pepper in a bowl.
  4. Fill each zucchini boat with the chicken mixture.
  5. Top with mozzarella and Parmesan cheese.
  6. Drizzle with olive oil.
  7. Place the boats on a baking sheet and bake for 25-30 minutes, or until the zucchinis are tender and the cheese is bubbly and golden.
  8. Serve hot.
