Ingredients

- 2 large zucchinis
- 2 cups cooked chicken, shredded
- 1 cup marinara sauce (sugar-free for keto)
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the insides to create boats.
- Mix the shredded chicken, marinara sauce, garlic powder, Italian seasoning, salt, and pepper in a bowl.
- Fill each zucchini boat with the chicken mixture.
- Top with mozzarella and Parmesan cheese.
- Drizzle with olive oil.
- Place the boats on a baking sheet and bake for 25-30 minutes, or until the zucchinis are tender and the cheese is bubbly and golden.
- Serve hot.
Notes
