Description

Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter until combined.
  3. Press the mixture into the bottoms of muffin pan liners to form the crust.
  4. In a large mixing bowl, beat the cream cheese, 1 cup sugar, and vanilla extract until smooth.
  5. Add eggs one at a time, mixing after each addition until fully combined.
  6. Pour the cream cheese mixture over the crusts in the muffin pan.
  7. Bake for 20-25 minutes until set but still slightly jiggly in the center.
  8. Let cool and refrigerate for at least 2 hours before serving.
