- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 16 oz cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 large eggs
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter until combined.
- Press the mixture into the bottoms of muffin pan liners to form the crust.
- In a large mixing bowl, beat the cream cheese, 1 cup sugar, and vanilla extract until smooth.
- Add eggs one at a time, mixing after each addition until fully combined.
- Pour the cream cheese mixture over the crusts in the muffin pan.
- Bake for 20-25 minutes until set but still slightly jiggly in the center.
- Let cool and refrigerate for at least 2 hours before serving.
