Instructions
- Preheat your oven to 425°F (220°C).
- Pat the chicken dry with paper towels and place it in a roasting pan.
- Rub the chicken with olive oil and season generously with salt and pepper.
- Stuff the cavity of the chicken with lemon quarters, garlic, and fresh herbs.
- Roast the chicken in the preheated oven for about 75 minutes, or until the internal temperature reaches 165°F (75°C) in the thickest part of the thigh.
- Allow the chicken to rest for 10-15 minutes before carving. Enjoy your meal!
