A warm and comforting Finnish soup blending fresh salmon, vegetables, and a creamy broth, perfect for chilly days.

- 500 g salmon
- 400 g potatoes (firm)
- 3 leeks
- 3 carrots
- 1.2 liters fish broth
- 200 ml heavy cream
- 1 bunch of fresh dill
- 1 lemon
- Salt and pepper
Instructions
- Wash and peel the potatoes and carrots. Chop the potatoes into small cubes and slice the carrots into thin rounds. Clean the leeks thoroughly and slice them into rings.
- In a large pot, add a little oil and heat over medium flame. Add the sliced leeks and carrots, cooking until softened, about 5 minutes.
- Pour in the fish broth and add the cubed potatoes. Bring to a boil, then reduce the heat and let it simmer for about 10-15 minutes, or until the potatoes are tender.
- Cut the salmon into bite-sized pieces. Add to the pot and cook for an additional 5-7 minutes until the salmon is cooked through.
- Add the heavy cream to the pot and stir well. Season with salt and pepper to taste. Chop the fresh dill and stir it in before serving.
- Squeeze a bit of lemon juice into the soup for added flavor, and garnish with a sprig of dill.
Notes
Choose fresh, high-quality salmon for the best flavor. Make sure to clean leeks well, as dirt can hide in the layers.
