Description

A warm and comforting Finnish soup blending fresh salmon, vegetables, and a creamy broth, perfect for chilly days.


Ingredients

  • 500 g salmon
  • 400 g potatoes (firm)
  • 3 leeks
  • 3 carrots
  • 1.2 liters fish broth
  • 200 ml heavy cream
  • 1 bunch of fresh dill
  • 1 lemon
  • Salt and pepper

Instructions

  1. Wash and peel the potatoes and carrots. Chop the potatoes into small cubes and slice the carrots into thin rounds. Clean the leeks thoroughly and slice them into rings.
  2. In a large pot, add a little oil and heat over medium flame. Add the sliced leeks and carrots, cooking until softened, about 5 minutes.
  3. Pour in the fish broth and add the cubed potatoes. Bring to a boil, then reduce the heat and let it simmer for about 10-15 minutes, or until the potatoes are tender.
  4. Cut the salmon into bite-sized pieces. Add to the pot and cook for an additional 5-7 minutes until the salmon is cooked through.
  5. Add the heavy cream to the pot and stir well. Season with salt and pepper to taste. Chop the fresh dill and stir it in before serving.
  6. Squeeze a bit of lemon juice into the soup for added flavor, and garnish with a sprig of dill.

Notes

Choose fresh, high-quality salmon for the best flavor. Make sure to clean leeks well, as dirt can hide in the layers.
