Description

A simple, healthy flourless sweet potato bread made with real sweet potato, perfect for gluten-free needs and a quick snack.


Ingredients

  • 2 cups mashed sweet potatoes
  • 4 large eggs
  • 1/4 cup almond butter
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon (optional)
  • 1/4 cup chopped nuts or seeds (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Combine the mashed sweet potatoes, eggs, almond butter, baking soda, baking powder, vanilla extract, salt, and cinnamon in a large bowl. Mix until well combined.
  3. Pour the batter into the prepared loaf pan and smooth the top.
  4. Sprinkle chopped nuts or seeds on top if using.
  5. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow to cool for a few minutes before slicing and serving.
