Description

These Fluffy Blueberry Cottage Cheese Cloud Loaves are light and soft, made with cottage cheese, eggs, and almond flour, featuring real blueberries for a mild sweetness.


Ingredients

  • 2 eggs
  • 1 cup almond flour
  • 1/2 cup blueberries
  • 1 tsp baking powder
  • 1/2 tsp salt
  • Sweetener to taste (optional)
  • 1 tsp vanilla extract
  • Butter or oil for greasing

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan with butter or oil.
  2. Mix together the cottage cheese, eggs, sweetener, and vanilla extract until smooth.
  3. Combine the almond flour, baking powder, and salt in another bowl.
  4. Add the dry ingredients to the wet mixture, stirring until just combined.
