- 1 cup cottage cheese
- 2 eggs
- 1 cup almond flour
- 1/2 cup blueberries
- 1 tsp baking powder
- 1/2 tsp salt
- Sweetener to taste (optional)
- 1 tsp vanilla extract
- Butter or oil for greasing
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan with butter or oil.
- Mix together the cottage cheese, eggs, sweetener, and vanilla extract until smooth.
- Combine the almond flour, baking powder, and salt in another bowl.
- Add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the blueberries gently.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool before slicing and serving.
Notes
Serve plain or with butter or cream cheese. Pairs well with tea or coffee. Can freeze slices for up to 2 months.
