A quick and easy recipe for soft and fluffy pancakes that everyone will love.
Ingredients

- 1½ cups all-purpose flour
- 2½ teaspoons aluminum-free baking powder
- ½ teaspoon salt
- 2 tablespoons sugar
- 1¼ cups milk (any type)
- 1 egg
- 3 tablespoons melted butter
- 2 teaspoons vanilla extract
Instructions
- Mix dry ingredients in a bowl.
- Make a well in the center and add the wet ingredients. Beat the egg lightly, then stir until just mixed. Do not overmix.
- Heat a non-stick pan over medium heat and grease it lightly.
- Pour about 1/4 cup batter for each pancake. Cook until bubbles form on top. Flip and cook until the other side is golden.
- Serve warm.
Notes
For best results, do not overmix the batter and let it rest for 5-10 minutes.
