Description

Ingredients

  • 1 cup buttermilk

  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. In a bowl, mix the mashed sweet potatoes, flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract.
  3. Combine the wet ingredients with the dry ingredients and mix until just combined.
  4. Heat a skillet over medium heat and grease it lightly.
  5. Pour batter onto the skillet to form pancakes and cook until bubbles form on the surface, then flip and cook until golden brown.

Notes

Use room temperature buttermilk and egg for better mixing. Do not overmix the batter; small lumps are fine.
